Green Lentil Soup

Ingredients
- 1 cup green lentils
- 1 tsp salt
- 4 cups of arugula
- 2 tbsp ghee
- 1 tsp ground ginger
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1 tbsp lime juice
- 2 cloves garlic
- 3 cups of water
Directions
- Once lentils are cooked, let cool.
- Set some lentils aside.
- Blend the rest with half of the arugula , garlic, and spices.
- Stir in the rest of the lentils and arugula.
- Mix and serve with rice and dip.
