Green Lentil Soup

Ingredients

  • 1 cup green lentils
  • 1 tsp salt
  • 4 cups of arugula
  • 2 tbsp ghee
  • 1 tsp ground ginger
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1 tbsp lime juice
  • 2 cloves garlic
  • 3 cups of water

Directions

  1. Once lentils are cooked, let cool.
  2. Set some lentils aside.
  3. Blend the rest with half of the arugula , garlic, and spices.
  4. Stir in the rest of the lentils and arugula.
  5. Mix and serve with rice and dip.
