Cheesy bread

Ingredients

  • 1 ½ cups almond flour
  • 1 tbsp baking powder
  • 2 large eggs
  • 2 ½ cups shredded mozzarella
  • 2 oz cream cheese

Directions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Process almond flour and baking powder in a food processor until combined.
  3. Add eggs and process until smooth. Set aside.
  4. Melt mozzarella and cream cheese in a double boiler over low heat, stirring until smooth.
  5. Add the melted cheese to the food processor and pulse quickly until a uniform dough forms.
  6. Make sure the dough is completely smooth with no separate cheese or flour pieces.
  7. Divide the dough into 6 pieces. Roll each into a log and join the ends to form bagels. Place on the baking sheet.
  8. Optional: spray lightly with cooking spray and sprinkle with toppings such as sesame seeds or everything seasoning.
  9. Bake for about 15 minutes, until firm and golden.
  10. Let cool for at least 15 minutes before serving.
