Ingredients
- 1 ½ cups almond flour
- 1 tbsp baking powder
- 2 large eggs
- 2 ½ cups shredded mozzarella
- 2 oz cream cheese
Directions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Process almond flour and baking powder in a food processor until combined.
- Add eggs and process until smooth. Set aside.
- Melt mozzarella and cream cheese in a double boiler over low heat, stirring until smooth.
- Add the melted cheese to the food processor and pulse quickly until a uniform dough forms.
- Make sure the dough is completely smooth with no separate cheese or flour pieces.
- Divide the dough into 6 pieces. Roll each into a log and join the ends to form bagels. Place on the baking sheet.
- Optional: spray lightly with cooking spray and sprinkle with toppings such as sesame seeds or everything seasoning.
- Bake for about 15 minutes, until firm and golden.
- Let cool for at least 15 minutes before serving.
