Carrot Salad

Healthy carrot salad

Ingredients

  • 1 lb carrots, grated or julienned
  • 2 tbsp raisins
  • 1½ tbsp extra-virgin olive oil
  • ½ tsp salt
  • ½ tsp black pepper (optional)
  • Juice of ½ lemon (~2 tbsp) or mild vinegar
  • 1 handful walnuts
  • 2-3 sprigs fresh mint (optional)
  • 1-2 tbsp honey or maple syrup (optional)

Directions

  1. Wash and peel carrots if desired.
  2. Grate or julienne the carrots and place them in a bowl.
  3. Add raisins, walnuts, mint, olive oil, lemon juice or vinegar, salt, pepper, and honey/maple if using.
  4. Toss everything together until evenly combined.
  5. Taste and adjust sweetness or acidity as needed.
  6. Let sit 30–60 minutes before serving to allow flavors to meld.
  7. Enjoy!
