Ingredients
- 1 lb carrots, grated or julienned
- 2 tbsp raisins
- 1½ tbsp extra-virgin olive oil
- ½ tsp salt
- ½ tsp black pepper (optional)
- Juice of ½ lemon (~2 tbsp) or mild vinegar
- 1 handful walnuts
- 2-3 sprigs fresh mint (optional)
- 1-2 tbsp honey or maple syrup (optional)
Directions
- Wash and peel carrots if desired.
- Grate or julienne the carrots and place them in a bowl.
- Add raisins, walnuts, mint, olive oil, lemon juice or vinegar, salt, pepper, and honey/maple if using.
- Toss everything together until evenly combined.
- Taste and adjust sweetness or acidity as needed.
- Let sit 30–60 minutes before serving to allow flavors to meld.
